This recipe is almost too simple to put on the site but as I start my whole30 today, I’m trying to pull together some basics to keep me going through my next 30 days of clean eating.
Start by dicing up a small sweet potato into tiny cubes. Finely dice 1/4-1/2 of an onion as well.
These get dropped into a hot pan over medium high heat with 1 tbsp of melted coconut oil. Add in 1/2 tbsp smoked paprika, 1 tsp oregano, 1/2 tsp of cinnamon, salt and pepper, and cover and lower to medium low heat for 10 minutes. Check it once or twice to make sure it’s not burning and if it is add a little more oil. Once the onions and potatoes are softened and starting to crisp, remove cover, turn heat back up to medium high, add 2 crushed garlic cloves, and cook until everything is nicely crisped.
Top with a fried egg or two and enjoy!
